Homemade Boba Pearls

In the middle of the summer heat, you may want to drink something refreshing. How about a cup of bubble drink?

Within this post, I’ll show you a simple tutorial to make chewy and yummy boba pearls at home. It’s so easy and fun to make with nature ingredients.

Ingredients
For boba pearls:
70 gr tapioca flour
7 gr cocoa powder
25 gr brown sugar (I use palm sugar)
1 tbsp white sugar
75 ml water

For brown sugar boba pearls:
100 gr brown sugar (I use palm sugar)
80 gr white sugar
150 ml water

Instruction

  1. Place the palm sugar, white sugar, and water in a frying pan. Turn the heat to medium.
  2. Stir constantly until all the sugar dissolves
  3. Mix the tapioca flour and cocoa powder
  4. Turn the heat to low and slowly add the mixture. Stir until well combined.
  5. Once it becomes thicker, turn off the heat and transfer the dough in a floured surface.
  6. Knead the dough until it becomes soft and elastic

  1. Divide the dough into small parts

  2. Shape each part into thin and long rod

  3. Cut into small cubes

  4. Then, round each cube to a tiny balls

  5. Spread some tapioca flour and coat the balls to avoid sticking to each other

  6. Now, you have your dried boba pearls ready

  1. Strain the boba before boiling them
  2. Add the boba into boiling water
  3. Boil for 20 minutes
  4. Drain the boba and you are ready to add them to your favorite tea or milk drink

For a more authentic taste, I prefer to coat them in brown sugar. Let’s continue with the extra next steps.

  1. Place the palm sugar, white sugar, and water in a frying pan. Turn the heat to medium.
  2. Stir constantly until the sugar dissolves completely
  3. Add the boba. Stir well to coat all the boba pearls with the sugar. Cook until the mixture gets thick.
  4. Your brown sugar boba is ready to be served

  1. Add the sugary boba to a glass

  2. Add ice cubes

  3. Add your favorite tea or milk drink

  4. Enjoy your bubble drink!

It was really fun doing these homemade boba pearls. I think this will be a good family activity at home.

Personally I never knew how to make boba pearls. I like to drink it instead. Hahaa… lol.

What is the difference in using brown sugar vs palm sugar? Is it a difference in taste or texture? Both?

How much boba does your recipe make? And how long can you keep this fresh boba for? How do you store it? Does it taste different as it gets older?

I haven’t tried making boba with brown sugar. If I compare between my homemade version (using palm sugar) and the one I bought in store (using brown sugar), the taste and texture are very similar, I couldn’t really find the difference. But, using palm sugar definitely will make them more fragrant.

My recipe can make 4-5 cups of bubble drink. I prefer to serve them immediately, but these can be stored for later use. Keep them (step no.12) in an airtight container at room temperature, but don’t refrigerate them as this will harden the boba. Since there are no preservative added, it’s better to consume in several days.

Imho, @Lusianaa @KarenVChin , brown sugar would make the boba has stronger taste because it contain molasses. But palm sugar would add slightly coconut-ish taste, and not as strong sweet taste as the brown sugar version.

The funny thing here @iorikun301 is I do not have access to palm sugar, only brown sugar (light and brown kinds).

I have not check the local Asian grocery market.

Thank you sister @Velvel I’m glad you like it. The cocoa powder is used to make the boba dark brown and also add the chocolate flavor. Because who doesn’t love chocolate? :yum:

I think the dark brown kind will make the boba taste stronger and you don’t need to add white sugar.
