HOME MADE BADAM KHEER-DESSERT

Kheer is a form of pudding and is a very popular dessert in India. This is in fact a primitive dessert whose benefits are even mentioned in the traditional Ayurveda medicine system. The word ‘Kheer’ is obtained from the Sanskrit word for milk, Ksheer.

Ingredients for preparing Badam Kheer:

  • Full fat milk
  • Sugar
  • Almonds
  • Butter
  • Cardamom
  • Saffron
  • Chopped dry fruits

Procedure:

Almonds are blanched in water for at least 2 hours and then a smooth paste is made by grinding the almonds along with some milk (full fat), cardamom, saffron and sugar. In a separate bowl, heat milk at medium flame and when it comes to boil reduce the intensity of flame to low. The milk should be stirred continuously to prevent it from getting burn. The smooth paste is then transferred to the milk bowl with ceaseless stirring until bubbles can be seen on the surface. In a pan, butter is added and the dry fruits are fried and is later pour over the kheer.

Kheer is usually served during the family gatherings and festivals. Even in restaurants, Kheer has its place in the desserts menu.

No, it doesn’t tastes like yogurt. Kheer is rice cooked in milk with a lot of nuts and dried fruits.
