Sticky rice is somewhat sticky and gluey in texture. You can have it with beans or lentils. But here is somewhat offbeat recipe of sticky rice i found on the web. Mango Sticky Rice recipe is made of mango cubes, sticky rice, sugar and coconut milk.

Ingredients

  • 1 cup sticky rice
  • 1/4 cup sugar
  • 2 fresh ripe mangoes, cubed
  • 1 cup coconut milk
  • Pinch of salt

Recipe :

  1. Wash and soak the sticky rice overnight.
  2. Put banana leaf in the steamer and spread the rice over it.
  3. Cook the rice for 20 - 25 minutes
  4. Heat a pan and add coconut milk, sugar and salt.
  5. Cook until sugar dissolves. Keep stirring.
  6. Pour 1/4 cup of this coconut milk for serving.
  7. Once rice is done, transfer it to a bowl and pour the remaining coconut milk on the rice.
  8. Mix well until you get a thick consistency.
  9. Cool at room temperature.
  10. Serve the rice with mango cubes.
  11. While serving, drizzle the reserved coconut milk on the top of the rice.

Hi @StefAng_Sg , Mango Sticky Rice is my most favorite Thai dessert! I had it almost everyday when I visited Bangkok early this year. Thanks for sharing the recipe, I will be trying this. :slightly_smiling_face:
