It is a good time to explore different recipes, during this Shelter in place situation due to Covid-19.
I would like to share one of my favorite. You can grab a bag of assorted colors baby bell peppers in your local super market. Just like bell peppers these peppers are not hot, but very tasty to eat.
Nicely wash and dry the baby bell peppers and slit them using a knife so that you can fill the Stuffing.
Ingredients for Stuffing:

Handful of Dry roasted Peanuts (remove the skin after roasting). If you are allergic to peanuts, you don’t have to add them. Grind the roasted peanuts, to a coarse powder.

Two table spoon of Cumin Powder

Two table spoon of Coriander Powder

Two table spoon of ChickPea flour (Gives binding to stuffing)

One teaspoon of Chlli powder

Half tea spoon of Salt (or salt as per your taste)

2-3 Finely chopped garlic cloves

Two table spoon of cooking oil
Mix all of the above ingredients, your stuffing is ready. Fill the stuffing using a spoon in to the baby bell pepper.
You are ready to grill now. You can use a Stove top grill, as shown in the picture.
I use a Copper Grill Mat (Which can be used in your BBQ grill as well), this reduces the cleaning effort of the grill to great extent. They are under $20 for 4-5 sheets online. I highly recommend it, It saved me lot of time cleaning after grilling.
Grill the peppers, turning few times, till they are cooked and get some grill marks on the peppers!
You are ready to eat them now.
