Garam Masala : The most Important Ingredient in Indian Cuisines

Garam Masala (Blend of different types of Indian Spices in right measure) is probably the most important in any of the Indian Cuisines.

You may be eating at a Vegetarian Restaurant or Non Vegetarian Restaurant or even you are having a home cooked meal. You just can’t think about any of the Indian Recipes without Garam Masala.

THE INGREDIENTS OF GARAM MASALA

Coriander Seeds - 50 gm

Black Pepper - 30 gm

Fennel Seeds - 10 gm

Cumin Seeds - 10 gm

Green Cardamom - 9

Black Cardamom - 3

Star Anise - 3

Bay Leaves - 3

Kashmiri Chilly - 2

Nut Meg - 1

Mace - 2

Cloves - 12

Cinnamon - 5 gm

The above are the major ingredients. Some People use Poppy Seeds as well.

Dry all these ingredients, make it slightly warm in a pan. Grind the ingredients very well in a Blender and store in a glass container. It can be used for 7-8 months if kept in an Air Tight Container. Add one Tea Spoon in any of the Indian Veg/Non Veg like Chicken Masala, Prawns Masala , Mushroom Masala or any kind of Spicy Indian Curry. Generally, this is not used in Fish recipes other than Prawns.

Thanks for the response.

Yes, we procure most of the spices from farms in Kerala, hence, we get mostly fresh items.

Other spices are procured from reliable wholesalers.

Most of these spices have lot of medicinal values and help especially in winter season to keep your body warm.

@Velvel - You can find the recipe on my YouTube Channel.

Masala Chai/Tea ingredients are different. It is mostly Dry Ginger, Pepper and Green Cardamom. Some people add Cloves as well.

This is purely used in Non Veg/ Veg dishes.

@Cagil - My travel industry associates from Istanbul used to carry from India. Most of the spices are available there too, but will be more expensive.

Once the lock down is over and people start to travel, you can ask someone to buy from India, or even I can send some :+1: .

Do you often make Masala Chai by yourself?

@Velvel Yes, I do. But Masala Chai is not suggested in summers. We prefer having it in Winter and Monsoon as it makes your body warm.

@Velvel … Yes, in summer we generally don’t have masala tea… It depends how you adapt… can cause acidity or stomach upset if you have in excess.
