Hi @JustineE , Fettuccine Alfredo is a very simple dish, that was becoming famous in Rome on the mid '20. The recipe (fettuccine with triple butter and Parmigiano cheese) was so appreciated by the actors Mary Pickford and Douglas Fairbanks, that they give to Alfredo a set of gold cutlery.
After that, the recipe was becoming famous worldwide.
Personally, like you, I prefer Carbonara
