Rasawala khaman is a popular street food of Surat, Gujarat. It is made with crumbled khaman dhokla, which are soft and fluffy steamed snacks made from chana dal (split chickpeas). The khaman dhokla is topped with salad, sev (crispy gram flour noodles) and served with a spicy and tangy sauce called rasa. Rasa is made with a mixture of roasted and ground dals (lentils), spices, jaggery, tamarind and water. Rasawala khaman is a delicious and filling dish that can be enjoyed as a snack or a light meal.
