Yesterday I visited Ever After which was the first time I’ve been since their new head chef Joel started.
They had some seriously incredible new dishes on the menu each perfect in their aesthetics, texture and palate. The burrata with mango and crispy onions - what a combo. Not one I would choose to put together but the creaminess of the mango elevated the creaminess of the burrata and the crispy onions added important texture.
I love crunch with each dish I eat - it’s such a necessary texture and Ever After seriously delivered.
The steak tartare was stripped back to allow the meat to sing. Not your traditional steak tartare with capers, pickles and the egg yolk. Again texture with garlic croutons and crispy kale and sweet pickled onions provided a dish of perfect contrasts.
The aubergine custard with sorrel and white asparagus was a dish I wouldn’t have ordered had my friend not said have good it was and it was amazing. An umami bomb of rich aubergine custard with a layer of aubergine on top peppered with miso.
We also have the pork cheeks, cucumber risotto (a must order), fries (the best you’ll eat, ham & cheese croquettes and a chocolate dessert with caramelised soy that was amazing.
Michelin technique in a laid back style. The creativity without the fuss. Seriously impressive.
