Egusi Soup and Semo

This dish is mostly prepared during the weekend, especially saturday afternoon’s when everyone is at home.

This dish can be prepared for a minimum price of #500 ( less than $2), depending on the size of the family.

Looking at the ingredients, the soup is prepared with blended melon (Egusi), with Ugwu leaves and a little bit of bitter leaf can be added. It can be garnished with Beef, Fish, Cow skin, onions, stock fish and any other garnishing ingredients of your choice, 1 cube of maggi and a pinch of salt to taste.

Preparation

add a little red oil to your pot ready set on your stove, once the oil is hot, pour the grinded pepper, onions and locust bean. If you are adding bitter leaf, this is the best time to add it. Allow it to steam for 1-2 minute, wash your cow skin and beef and add to your cooking pepper sauce. Add 1 cube of maggi (Seasoning) and salt to taste. Add little water and allow to cook for another 2-3 minutes. Mix your blended melon (Egusi) with little water or squeeze with onion, then add to the cooking sauce. Allow to cook for 2-3 minutes. Then wash your Ugwu leaves and add it to your cooking sauce… Cover and allow to boil for 2 - 3 minutes.

This above steps takes nothing less than 15 minutes and 20 minutes at max to prepare.

Preparing your Semo

Put a 2 glass of water to boil in a pot, depending on the number of the family. Once it boil, make a paste from semo flour, add to the boiling water, stir till smooth. Leave for 1-2 mins to form (Don’t cover), afterwards start pouring the flour to your boiling paste, add till it become thick. continue to stir till you get your desired strong level. It’s best to not be too strong.

Serve and your Food is ready.

This Dish is mostly eaten by the south-west part of Nigeria.
