Discovering Pinsa: The Pizza Which Is Not A Pizza!

Pizza is surely one of the most known Italian dishes. But what happens when you get to a similar preparation, mode with a mixture of rice, soy and grain flour, in a way it results more light than a pizza, but with taste similar to pizza? You get what is so called “pinsa”, thin and crispy, differently from Neapolitan pizza, which is high and soft. Pinsa is an ancient Roman recipe, also in the Aeneid poem you can find some references to this pie, maybe made in a little different way in that period. Finally, a pinsa is not totally rounded like a pizza, but it is more oblunged. And incredibly tasty.
