In India any kind of pulses like lentils, peas, beans etc are called dal.

Yes @Simon_F a variety of spices like powdered red chillies, haldi, hing etc and once it’s cooked completely it’s garnished with fresh coriander.

In Mumbai we have popular joints for Rajasthani thaali among which Chowki Dhani and Rajdhani Thaali Restaurant are the best.
