Cuisine of Bodoland Assam in India

During my recent tour of Bodoland, Assam in India I was lucky to taste flavourful dishes of Bodo cuisine. One thing that distinctly stands out in Bodo cuisne is that they specialize in fermented dishes. Both vegetables and non veg item like fish are dried, ground with spices and stored and sealed in bamboo stems. During lean period they consume these fermented dishes.

Another speciality of this cuisine is that they prepare non veg items with vegetables and lentils. The combination enhances the taste of lentils, vegetables and non veg item.

People of Bodoland eat silkworms. Most households of villages of Bodoland weave silk yarns or fabrics. They have their own farm of 1000s of silkworms. Sometimes they indulge in some of these silkworms as snacks with rice beer or tea! Have you eaten silkworms before?
