Corn bread taste & recipe attached

A special treat for all the foodies like me on connect. Once I use to post regularly here as a foodie ,but now I’ve found new interest and hobbies on connect. Yet food is still very important. Its been a while since I posted on this board,so here you are now. I have written post on Local drink, French-fries-and-chicken-Homemade, Creamy-connect-cake-CCC , Local Ghanaian food Kenkey. Customised ice cream for connect. etc post. Now I’m here with a totally new and different recipe. It’s called corn bread. Very unique and usual snack here in Liberia where I reside and work for now. Its a snack,not for special occasions or anything. Just a usual snack !! I got tired of drawing roads on **TRAC event. **Lol. So just some new thing for a break and I tried baking corn bread all by myself. I followed the recipe though. Please feel free to try it and kindly ask for advise or other questions regarding this. I will be happy to reply you and also get a piece of the cake if you succeed. Lol.

Ingredients and recipe.

  • Corn flour 1 cup
  • All purpose flour 1 cup
  • Sugar 1/4
  • Milk 1 cup
  • Egg 1
  • Oil 1/4
  • Baking powder 3 teaspoons
  • Salt (Optional)

Process/Preparation

Mix the corn meal,flour,sugar,baking powder and salt in a bowl. I mixed this thoroughly in a separate bowl. Please note that this should be mixed first in its dry form. Make sure that it’s well blended together

Next is the egg(Well beaten) mix with the oil,milk and the beaten egg.

The third stage mixed both dry and liquid ingredients now. It takes a good while of beating and stiring to make sure that it’s well mixed up.

Pour the batter in the baking pan. The baking pan should be greased with butter or margarine

The oven should be pre-heared 425 degrees before the bread goes in.

Now the rest of the process is just the normal baking time in the oven. It should be 20 minutes minimum and 30 minutes max. Of course you know how to stick in a match stick to check if the bread is ready or not. The aroma start to come up as well etc. You want to be careful not to get it too dry and hard.

Fresh from the oven,smells so fresh that you can’t resist it. The taste oh the taste so yummy that you’ll like a piece of it. Maybe with a cup of tea or coffee, maybe with a cold drink. You could try it with butter,peanut butter or even honey,just irresistible taste.Hope you enjoyed the corn bread ? I enjoyed it anyway.
