In Cairns, Christmas always means heat and humidity. So, the idea of making traditional Christmas food- like roast meat and vegetables, fruit cake and steamed puddings- is a bit difficult to swallow.
For Christmas, I make a Rosewater pavlova with tropical fruit. It’s light, fluffy and delicious.
The only problem is that the recipe calls for 6 egg whites- what do you do with the 6 egg yolks? You make vanilla slice of course! This year I topped mine with homemade passionfruit curd.

Oh no @goelmyself . I don’t eat lactose, so I understand food allergies and intolerance. Do you enjoy eating dessert? If so, which types of desserts can you eat?
Yum @Petra_M . One thing I do miss about a ‘hot’ Christmas is the roasted meats and vegetables. I cook a glazed ham, but we tend to eat that cold. Thanks for sharing your yummy photo!
@JustineE — it is funny to think you are having summer below the equator while I am having a chilly winter.
Never thought about Christmas being hot, not to say I live in an area that has snow. But it has been damp and a little soggy for the month of December.
This year I had a pre Christmas party at home which I roasted a prime rib roast and went to Christmas Eve and Christmas Day parties at friends and family homes so I didn’t actually cook.
