Having talked much about hotpot (here and here), here I will talk better about the restaurants where you can eat hotpot. This is because, when eating hotpot at a restaurant, you can find two kinds of services, exactly for what happens when you go to a Japanese restaurant:

the first kind of hotpot restaurant has a classic service from which you choose the broth (or two or even three broths) and then you order the ingredients you want to cook and eat. You pay for the broth and the single ingredients you order.

the second kind of hotpot restaurant is all you can eat: you pay for a fixed price (generally a little higher than price of all you can eat sushi restaurants) and then you can have access to an unlimited buffet from which you can take the ingredients to cook.
