This is one of the popular starters in restaurants in India, definetely one in my house when we invite guests at home. I have been making this dish over a period of time, I also use Cauliflower (Gobi) or Cabbage instead of baby corn. They end up becoming ‘Chilli gobi’ or ‘Chilli Cabage’. Recipe pretty much is the same though.
I would like to use the fresh baby corn, canned version will do too. I was able to buy fresh baby corn from Trader Joe’s.First step is add the fresh corn in to boiling water and boil it for 3-4 mins. You can cut them in to 3 pieces.Here are the list ingredients you need for chilli baby corn.GingerGarlicGreen OnionsJalapeno PeppersThai ChilliesAll Purpose FlourFor the sauceTomato KetchupSoy SauceRice VinegarChilli PowderGround Black PepperThe recipe it self is straight forward and simple, only time consuming part is deep frying the baby corn.Here are the stepsStep 1: Add 3-4 large pieces of Ginger, 4 cloves of Garlic, 4 Thai chillis, add water in a blender make a nice paste.Step 2: In bowl add 4-5 table spoons of all purpose flower and the blended paste done in step 1, add water to make it in to a thick batter. Of course add salt to your taste. No need to add too much salt, since the final sauce uses Soy Sauce.Step 3: Chop large pieces of Ginger in to small pieces and also garlic. A cup as shown in above picture is enough. Also slice Jalopeno peppers as shown in the picture above and green onions. Sauté Ginger garlic and Jalopeno in a table spoon of oil and keep it aside. We will add this to the sauce in the end.Step 4: Deep fry the baby corns till they are crispy. Use a paper towel to remove excess oil after frying.Deep fried Baby corn.Step 5: Preparation of sauce and final step. On a large pan heat up couple of spoons of oil, add Tomato Ketchup, Red Chilli powder, ground black pepper and Soy Sauce. I like my Chilli Baby cor to be little dry, so I don’t make too much sauce, but it is up to you, if you make sauce, you will have a gravy version of Chlli baby corn, After the sauce is heated up, add sauted Ginger, Galic, Jalopeno which was kept aside. They dump the deep fried baby corn to it. Mix it well. Finally garnish with green onions. Your starter is ready!This is how the final product looks.As I mentioned earlier, baby corn can be replaced or supplemented with Cauliflower, and/or sliced cabbage. They all turn out be great. In fact slice cabbage, is crispiest of the three.Final step: is to open some beer cans or bottles and consume this starter!
