Chicken fried with eggs and veggies is a quick and easy to prepare recipe. It has a good nutritional value thanks to the green vegetables, boneless chicken, eggs and boiled rice. I will share a simple and easy recipe which will be sufficient to serve at least 4 to 5 servings:
Ingredients:
Boneless Chicken- 300 grams
Cooking oil-2 Tablespoon
Eggs-3
Basmati Rice-600 grams
Chopped Onion-100 grams
Chopped Garlic- 1 Tablespoon
Chopped Carrot-100 grams
Capsicum- 60-70 grams
Chopped Cabbage- 100 grams
White Sugar-Half Teaspoon
Salt-As per taste
Maggi chicken stock – 1 cube
Black pepper powder- 1 Teaspoon
Vinegar-1 Tablespoon
Soy sauce-2 Tablespoon
Procedure:
- Chopped the boneless chicken into small pieces and set it aside in a bowl.
- In a pan add cooking oil and put it at a low flame and then add eggs to it. Now fry until the eggs are sufficiently cooked and set aside.
- In the same frying pan add garlic and fry it in the oil till its color changes to golden brown. Now add chicken to the pan and stir together steadily up until the color of chicken starts to change.
- Add up capsicum, carrot, cabbage to the pan and mix well for a minute or two. Also add salt, sugar, and mix it well. Now transfer the simmered basmati rice and mix all the ingredients thoroughly.
- Add a cube of chicken stock along with black pepper, vinegar and soy sauce and mix well.
- Now add the crumbled eggs and garnish with cabbage leaves and green chili.
- It is best recommended to serve this dish when it is hot.
