Champon from all over Kyushu 九州各地のちゃんぽん

In Kyushu, there is a menu item called “chanpon,” which consists of vegetables, meat, and seafood served with soup noodles.

Depending on the region in Kyushu, the soup varies in thickness, seasoning, and even the type of noodles.

I am still in the research stage, but I hope to be able to classify them neatly in the future. It is a very difficult task.

I can’t say it’s an achievement, but here are some of my findings.

★Nagasaki Prefecture

Nagasaki Prefecture is known for its chanpon.

It is said to have a good appearance, a variety of ingredients, and thick noodles.

●Sasebo City

This is a popular restaurant in Sasebo City.
The soup is refreshing and contains plenty of vegetables.
In winter, they serve oysters from Kujuku Islands!

●Hirado City

Even in Nagasaki Prefecture, the situation changes when you go to Hirado in the north.
Seafood, mainly shrimp, squid, and clams.

Clams seem to be a specialty in the Hirado area, so there are lots of them.

These two stores are very close to the station.
Enjoy them along with your train journey.

★Fukuoka Prefecture
Even in my hometown, it can be classified in detail.

●Fukuoka City

Called “Hakata chanpon” by some, the soup is thicker than Nagasaki and the ingredients are more colorful.
The noodles are a little soft.

One of the characteristics of chanpon in Hakata is that the soup is often covered with a film of oil to keep it from getting cold.

●Kitakyusyu City

There is a clear difference between Yahata-Higashi and Tobata wards, which are close to steel mills.

・Tobata Ward (Tobata champon)

Tobata chanpon is recognized as a brand, but unfortunately, more and more stores are closing down in recent years.
One of the features of this dish is the use of “steamed noodles” to shorten the cooking time.

It is popular because it is a quick and hearty meal for people working in steel mills.
The ingredients are pork and seafood.
Unlike in Hakata, the soup is thin and refreshing.

・Yahata-Higashi Ward

This one is also close to a steel mill, so you can add a hearty, freshly fried chicken cutlet.
Unlike Tobata, it does not face the ocean, so seafood is not added.
Yahata does not use steamed noodles.

●Oita Prefecture

Finally, champon without pork bone soup.
Taketa City is a mountainous city located on the border between Oita and Kumamoto Prefectures.
The city offers “Taketa Champon” which is filled with local vegetables.

The main soup here is made of chicken bones instead of pork bones.

It is also said that as you head southeast from this area towards Miyazaki Prefecture, there are more restaurants that use chicken broth-based soup instead of pork bone soup, but I have not confirmed this.

Summary
There are many different types of noodles in Japan, and the seasoning of the broth and the thickness of the noodles differ from region to region.

My guess is that chanpon is probably the only dish that differs so clearly in such a small area.

I think it’s a good idea to include specialties and things that are often harvested, as it leads to local production for local consumption.

●平戸市

同じ長崎県でも北の平戸に行くと様子が変わります。

エビ、いか、アサリのシーフードが中心。

アサリは平戸界隈では特産品らしいのでいっぱい入っています。

この2つのお店は駅からとても近いお店です。

★福岡県

私の地元でも細かく区分けができます。

●福岡市

一部の人々には「博多ちゃんぽん」と呼ばれ、長崎よりはスープが濃く、具材の彩りはもっと良いです。

麺はやや柔らかめです。

博多のちゃんぽんの特徴のうちの1つとして、スープに油の膜が張って、冷めにくくしているところが多いような気がします。

●北九州市

製鉄所が近い八幡東区と戸畑区では明確な違いがあります。

・戸畑区(戸畑ちゃんぽん)

戸畑ちゃんぽんは1つのブランドとして認定されていますが、残念なことに近年閉業するお店が増えております。

特徴として「蒸し麺」を使って調理の時間を短くしています。

製鉄所で働く人々へ早くできるボリュームのある食事ということで人気があります。

具材は豚肉やシーフードです。

スープは博多と違って薄め、さっぱり食べられます。

・八幡東区

こちらも製鉄所に近いので、ボリュームたっぷり揚げたてチキンカツが加えられます。

戸畑と違って、海に面していないので、シーフードが入りません。

八幡は蒸し麺を使っていません。

●大分県

最後に豚骨スープを使わないちゃんぽん。

大分県と熊本県との境にある山間の都市、竹田市。

地場の野菜をいっぱい入れる「竹田ちゃんぽん」を提供しています。

こちらは豚骨ではなく鶏ガラのスープがメイン。

このエリアから南東の宮崎県の方に向かうと豚骨スープではなく、鶏ガラスープベースのお店が多くなるとも言われていますが、私は未確認です。

★まとめ

日本にはいろんな麺類があり、地域によって出汁の味付けや麺の太さが違います。

狭いエリアでこのように明確に違う料理はおそらくちゃんぽんだけではないだろうかと推測しています。

特産品やよく採れる物を入れるのは地産地消につながって良いかなと考えています。

I love japanese food even if I don’t eat some so often.

By the way, when I heard about chanpon, I suddenly remember jjampong (Korean spicy seafood noodle soup). Are they siblings to each other?

Noodles in soup with lots of meat and vegetables are found all over Japan.
I think most places outside Kyushu call it “gomoku-soba”.

It was a beautiful day this past weekend, so I spent it cycling, feeling good!

Unfortunately, my favorite is not one of them, but the chanpon of a restaurant that has already gone out of business :cry: .
Out of all of these, I’d recommend Tobata Champon!

As for your question about Korean food, unfortunately I am not exactly sure.
It is said that chanpon originated from soup noodles full of vegetables and meat made by people who came to Japan from the Qing Empire.
It is also said that some of it flowed from there to the Korean Peninsula.
