In continuation to the brilliant series Khaana Khazaana - A Flavorful Challenge by LG @AjitThite ji, here is my small contribution to it.
Background: I started cooking at the age of 15, when I used to help my mother prepare food. I owe everything I learnt to cook from my mother, who always used to give me tips to prepare delicious food in a short time. I could never get the chance to thank her for it, but each and every dish I cook is dedicated to her.
My entry to this series : Mutton Curry. Born in a South Indian family, eating Non Veg food on a Sunday was a tradition in our family. Dishes ranging from Chicken Biryani, Chicken Fry, Fish Fry, Mutton Curry etc were a mandate on Sundays. But Mutton Curry was the family favourite dish. The aroma wafting from the kitchen on a Sunday morning when Amma used to cook still feels nostalgic. I recreated this dish basis the ingredients and cooking process my mother used.
Ingredients:
Mutton 1kg
Onion 400gms
Tomato 300gms
Garlic 1 pod
Green Chillies 8-10
Ginger 200gms
Salt to Taste
Red Chilli Powder
Turmeric Powder
Coriander Powder
Cooking Instructions
Grind Onions, Garlic, Ginger, Green Chillies. Grind tomato separately. Heat Oil in a Thick bottom Pressure cooker, add condiments like Cumin, Black Pepper, Cardamom, Cinnamon, Clove. Add the ground paste once the condiments splutters. Fry till golden brown. Add the dry masalas. Fry till the oil separates. Add the ground tomatoes and fry for 3-4 minutes. Add the washed mutton pieces and fry till the oil separates. Cover the cooker with lid and allow 2 whistles on low flame.
Once the steam is gone, open and add a garnish of Green Coriander. Best enjoyed with hot steamed rice.
