Buddha’s Delight or as known by its Chinese name, 羅漢齋 (Luo Han Zhai) is a well-beloved Chinese Vegan Classic.
Today (26 May 2021) is Vesak Day, a day where Buddhists celebrate the Buddha’s birth, enlightenment, and passing away. In the spirit of compassion, I would like to take this opportunity to share this Vegan Buddha’s Delight recipe with you so that you can enjoy a yummy vegan meal in the comfort of your own home.

Ingredients:

Dried Shiitake Mushrooms

Dried WoodEar Mushrooms

Dried Bean Curd Stick
-
Glass Noodles
-
Tofu Puffs
-
Carrots
-
Cabbage
-
Snow Peas
-
Bamboo Shoots
-
Baby Corn
Try to make all the ingredients have a 1 to 1 ratio.
Sauce:

1.5 piece of red fermented bean curd

1 tablespoon vegetarian oyster sauce

1 tablespoon light soy sauce
-
1 tablespoon sesame oil
-
1 tablespoon sugar
-
Pinch of salt

Water used to rehydrate the Shiitake Mushrooms.
Steps:

Rehydrate all the dried stuff 1 hour before cooking.

Roughly chop ingredients into bite-size pieces.

Start with stir-frying the Shiitake Mushrooms.

Then, mix in the smashed red fermented bean curd.

Next, basically, just pour in everything else (besides the Glass Noodles)

Pour in the sauces listed in the sauce list above.

Stir fry then braise on low heat for roughly 10 minutes.

After that drop in the glass noodles and cook further for 2 to 3 more minutes.

Thicken sauce with corn starch slurry and you are done!
