Biryani - A tempting food story

Kolkata the capital of the state West Bengal. Bengali, the native people of Kolkata are foodies in nature. Previously I shared posts about The Sweet delicacies of West Bengal and The Hilsa fish story. Today I am sharing the Kolkata style Biryani.

Biryani which is also known as Biriyani, Biriani and more is very popular on the Indian sub-continent. It is a combination of flavored rice and cooked meats. However, other than meat( chicken, goat, lamb, etc.) biryani is also can be made out of fish, egg or vegetable. Every state in India has its style of cooking Biryani, among them, Hyderabadi Dum Biryani, Lucknow Biryani, Ambur Biryani, Kachi Biryani and Kolkata style Biryani is popular.

Kolkata style Biryani is evolved from Lucknow Biryani, through The last Nawab Wajid Ali Shah, who was deported in Metiaburuj the suburb of Kolkata. His economic condition was not good at that time so he starts adding potato in Biryani instead of meat. From then the style of giving potato in Biryani is adopted.

The Kolkata style Biryani is served with a big piece of potato, a boiled and flavored egg and the cooked meat along with flavored rice.

The meat or fish is marinated with yogurt, Indian spices, and Garam Masala. Garam Masala is a mixture of mainly Cardamom, Cinnamon, Cloves, Mace and, Star anise. Ghee( clarified butter) is used for cooking it gives awesome taste and aroma. The rice is cooked in whole Garam Masala then layered with cooked meat. Saffron in warm milk is used for giving the yellow color to this dish. Saffron enhanced a nice aroma to this dish. After layering with rice, potato egg, and meat, it is covered and sealed and set for dum( slow cook) for hours. After opening the aroma fills the whole place. The tempting look and aroma bring cravings immediately.

I made this dish at home and often go to restaurants also to taste this delectable dish. In Kolkata array of Mughlai restaurants serves Biryani, even local street vendors are also serving Biryani. Don’t miss to taste this dish if you ever been in Kolkata or suburbs of Kolkata.

Yes, it will take about 2 hours minimum to prepare the dish. So if you are working, the weekend will be best to do it.

In these pictures, I used the Nikon prime lens 35mm. I am very particular about my props and choosing the color of the background to make my subject prominent. Light also another main thing for photography, other than that there is no secret :slightly_smiling_face: . I am glad that you find my photography professional I am trying to do so, and still learning. For food blogger food photography is everything. Thank you !!

What I try to do usually is to follow the steps in this post 5 tips to consider when styling food. However, I don’t always have my Nikon D3500 with me so I take photos with my mobile phone.

Perhaps you should write a post where you are sharing your tips when it comes to food photography and blog pictures? I am sure it will be appreciated.

I am recently out of Kolkata for a couple of years. However, my first choice is Arsalan Restaurant, we can’t decide to go to other places :grinning: . Next Aminia Restaurant near Newmarket Kolkata. Then Oudh 1590. I only like Chicken or Mutton Biryani, preferably Mutton Biryani :blush: .

We, at our home, cook potatoes biryani, but we never knew from what kind of beryani it has been evolved, and what exactly is the story behind. I really enjoyed the story of nawab wajid shah, that you have mentioned.
