During my previous meet-up, Virtual Taste of Summer Fruits attendees were surprised while I told them about the Pineapple pickle. They could not think that pineapple pickle is really possible. I was also surprised by seeing that they were surprised. But they were right. Actually pineapple pickle is not a common pickle even in Bangladesh. As I am from the pineapple growing area of Bangladesh so I know about it but many other people here do not have an idea about this special and rare kind pickle. The recipe I am going to share is prepared by mother and THE WAY OF MAKING THIS PICKLE IS HER OWN AND EXTREMELY MANUAL. YOU MAY NOT LIKE SOME PARTS OF THE VIDEO IF YOU KNOW OTHER WAY YOU CAN FOLLOW YOUR OWN.
What you need:
Pineapple 2 pcs (not too green, not too ripe)
Sugar Âľ cup
Salt (As needed)
Cardamom ( 3-4 pcs)
Cinnamon ( 2-3 pcs)
Cinnamomum Tamala (Indian Bay Leaf) 2 pcs
Cumin (it helps to preserve for a long time as my mother told)
Oil ( ½ cup)
Ok, now let’s start by cutting the pineapples into pieces. Then squeeze the slices by hand to take the juice from them. You can blend them to make the juice but the will become so soft that you will lose the fiber of them and it will not serve the purpose. If you make pickle with paste-like (blended) pineapple you cannot feel the existence of them inside your mouth. That’s why my Mom makes this manually by using hand. Then separate the juice and flesh. Now you need grindstones (Pata Puta) and crash the flesh again to make a paste with fiber. Now, pour oil in the pan, give the spices one by one and keep stirring for some time. After that pour the pineapple juice and stir for a while. Then add the sugar and salt one by one. After mixing all of these well, give the pineapple paste and stir. Keep stirring until it becomes thick. And done. Very easy. If you do not like my PRIMITIVE method you can find some modern method here. I am not sure whether you like this recipe. Thanks.

@MukulR It looks yummy. I agree with teh @Nyainurjanah that how you cut the pineapple is unique. But what have you done to @Ewaade_3A ? She seems a bit mad at you.
Your idea is correct @FalguniP . Yes, it spreads a nice smell when you fry the spices in oil and then add the pineapple juice. You can also get the smell of the spices in the final pickle. We will eagerly be waiting to see your nice post on this uncommon item of pineapple pickle.
I am extremely sorry to hear that you are hurt with my behavior to you on the meet-up day @Ewaade_3A It was an open and interactive meet-up you have seen. This is our own way of cutting in the kitchen . We cut fish. vegetables and other things this way for years @Ant_Bad_Yogi . Though modern housewives use a knife, that traditional cutting exists everywhere. Thanks for your comments.
