AlFaham Chicken with Bukhari Rice-Traditional Saudi Arabian Food

Chicken AlFaham rice is a traditional food which is very popular in every region of Saudi Arabia. The food comprises of marinated grilled chicken. The marination is done with the secret Arabian spices and is later barbecued in a charcoal grill or oven.

The Faham Chicken is usually served with the traditional Bukhari or Kabsa rice. In the pictures you can see the Bukhari rice is being served along with the barbecued chicken. Bukhari rice has its origin related to Afghanistan :afghanistan: . The fragrant basmati rice is loaded with spices and flavors. Basmati rice is commonly used in the preparation of Bukhari rice and olive oil is used for its preparation. Onion, chilly, raisins, carrot, chicken stock, tomatoes and Bukhari masala are some of the ingredients which are typically used in its preparation. Sliced onion, lemon and arugula leaves is the common side dish which is provided along with the Bukhari rice and barbecued chicken.

This restaurant is very famous in my locality, especially for Bukhari rice with Faham chicken. All the staff in this restaurant is from :afghanistan: and there are many famous Bukhari restaurant chains operating throughout Saudi Arabia. The typical cost of a Half chicken faham with Bukhari rice is 16 SAR (4.5 US$) and will be sufficient for two servings. In a typical Bukhari restaurant food will be served on an Arabian majlis styled seating.

I am so curious about the marinating spices on that chicken. It looks mouthwatering. I also am fascinated by the traditional seating. I wonder if my back and legs could survive sitting that way!

Thanks for sharing this meal with us. I like that you could add raisins or perhaps cranberries to it. This definitely shows a nice touch to it. How often do you prepare it? Do you use only your oven to cook it or you have some other techniques up in your sleeve?

We call it Biryani out here in India and there are different types of Biryanis depending on the city where it originated like Hyderabadi, Moradbadi, etc.

I love the seating arrangement, it must be a feast with many people enjoying together.

@JordanSB Thanks for the comment, Restaurant tables with chairs are also available in this kind of restaurants, but usually they are few in numbers. I just love the taste of the Bukhari rice, especially its flavor and scented smell.

@MoniDi Thanks for the comment, I usually prefer eating this food at restaurants. They tastes well in the restaurants when compare to home cooked. In restaurants they use Barbecue charcoal to cook the chicken.

As a true Hyderabadi, I can assure you that our Biryani is far more tasty when compare to this dish @TusharSuradkar bhai. The chicken biryani in your photograph looks delightful. Thanks for the comment.

In fact, I was going to comment about Hyderabadi biryani in response to your post.

But I thought you are a Saudi Arabian national, so avoided any confrontation.

I have tasted Paradise biryani in Bengaluru, Chennai, and Gurugram but not in Hyderabad :smile:

I have been to Hyderabad a couple of times for about 4 days each trip.

Which place in Hyd is the best to taste the biryani, other than Paradise?

@TusharSuradkar I would recommend you to visit Hotel Shadab (In the old city) and Sohail Hotel and taste the Biryani during your next trip to Hyderabad. Both the hotels are well-known for Biryani.

And for the dessert, I also like Umm Ali, but the one that I tried before was too sweet for me. The less sweet would be better.

Oh, Kunafa and Baklava. They are Turkish dessert, right? I’ve never tried them all. But I’m so excited to explore and try Turkish dessert someday :smiling_face:
