Agushi stew prepared with Tuna and salted fish(RECIPE)

Recipe and ingredients

  • Agushie(Melon seed)
  • Tomatoes
  • Pepper
  • Onions
  • Garlic and ginger
  • Thyme(for flavour)
  • Smoked Tuna(salted fish is equally good)
  • Palm oil(red oil)
  • Salt

Preparations

Blend the melon seed, ginger and garlic together

Blend the tomatoes and pepper

Chopped onion

Pre heat your sauce pan and add the palm oil 2mins (max)

Add the salted fish immediately followed by your chopped onions.

Stir gently for about 4mins (max) make sure it’s te onions is well cooked.

Add in the blended tomatoes and pepper. Simmer for 10mins(max)

Add in your washed Tuna.

After 2 mins add in the blended melon seed(Agushie)

Reduce the temperature slightly and allow to simmer for 7mins(max)

Lastly salt for taste and thyme for a good aroma and you have your nice pot of Agushie Stew.

Thank you for your recipe @SholaIB . The Agushie stew reminds me a bit of the Nigerian Egusi soup eventhough there would more ingredients in it like beef, tripe, pumpkin leaves or bitter leaves and no thyme.

Hello @Zino its the same melon seed but different method of preparation. That Egusi is lovely too with the pumpkin leaves and Eba or Semo :+1:t4: :wink:
