I like to adding new small businesses to google maps. These small businesses are amazing businesses they range from kids hair cut studios to new restaurants

Yes, you can add small businesses/vendors on google maps including impermanent structures like kiosks etc.
I do that often you may visit one of such businesses I have added recently Dinesh Amritsari Kulcha
You may mark the identification using the feature 'Add a missing place’ in Google Maps. Once you have submitted the business/vendor. You would have to wait for this place to be reviewed and added. You would receive a notification as soon as it is published.
After it gets published, you may insert a review too for the same. Hope this helps.
