I am trying to add a missing road. But constantly getting a server error in spite of no network issues.

Have you tried to add through the Mobile App.

@AshwinT as Madan suggested, since you are seeing this error on desktop edit, can you try your mobile to see if it works?

Also from desktop, you can send a feedback about the error. Menu > Send Feedback > Your opinion about Maps > include a detailed explanation.
