I live in Hermosillo, Sonora; a very hot city in the northern part of Mexico. My state shares border with Arizona and we have lots of local foodies that make Sonora, Mexico very unique.
This is a burro Percheron. A big burrito filled with meat, cheese, tomato, and avocato…this special variation is an Ahogado (literal translation is drowned) which is just a the Percheron bathed in tomato sauce.

This looks absolutely delicious @Turok90 , pure comfort food! I love everything about this dish but Mexico is very far away. I might try and make it myself.
I’ve heard there’s a big difference between actual Mexican food and the Tex-Mex you get mostly in the states, so if you can vouch for this as true Mexican food, then I would love to try it.
There’s is a difference @MortenSI actually although they’re very very similar that some Mexican dishes are viewed as Tex Mex dishes. In essence, you can see it as authentic Mexican food because it was born in Texas by Mexican residents.
Although similar in nature, there’s a difference between some ingredients (burrito fillings, cheese and stuff), spices and who makes it; so I would say no. BUT…they are very related.
But if I would live in the States, tex mex food would be a great foodie to remember home. Since Sonoran food has some tastes from Arizona.
Although if you go to a Tex Mex place or a Mexican restaurant, always look for the lady or grandma making flour tortillas; if that’s there…it’s authentic Mexican food.
Stay away from Tia Rosa tortillas or packaged taco crusts.

I think the authenticity of the grandma making the food applies to most cuisine. I always try to go for the place that looks the least flashy, and where I can see that it’s an experienced local who’s making the food.
If I go to Mexico I wouldn’t go anywhere near packaged tortillas or taco shells. Not when the real deal is so much better.
In Mexico we never use those kind of tortillas so you’ll get the real experience
