I do agree with you. Portugal is such a vibrant and happy country. I had the chance to visit it twice couple of years ago and I loved both Lisbon and Porto. If I have to choose one dish for each city I would say pastel de nata ( a delicious sweet crunchy outside and creamy inside, usually served with sugar and cinnamon) from the first one and francesinha from the second one ( kind of super massive sandwich served with a secret sauce).

Did you have the chance to try them during your visit?
