3 Home-made Yummy and Healthy Delicacies

Unlike other weeks, a beautiful week at home. Self quarantined, enjoying home cooked delicacies.

As stores, shopping malls and restaurants have been closed down. So, there is nothing to chill outside. While being locked down at home, decided to prepare some yummy breakfasts with the farm fresh vegetables and fruits in a healthy way.

I am not too good in cooking but prepared some yummy eateries at home.

Local markets are the best place to get fresh fruits and vegetables. I got a lot of vegges including mushrooms, baby tomatoes, green chillies and brown bread with sesame seeds.

I love doing experiments with foods when my mother is out for the work.

And, here I go;

A blend of Flavours

Mixing the chopped red and yellow bell pepper, mangoes, sliced onion and perfectly cut green chillies created a mixture and added a spoon full of lemon juice.

This dish was a perfect blend of various taste and rich aroma of mangoes was paired so well with mixture. It was a such a tasty dish and a way too healthy starter. I will definitely recommend everyone here to try this blend of flavours.

Mushroom Sandwich

After tossing put the chopped mushrooms, baby tomatoes and some finely cut garlic in a pan with a spoon of extra virgin olive oil added with a pinch of salt and classic oregano seasoning on a medium flame, i placed the mixture on the brown bread with sesame seeds and crafted this healthy and amazing mushroom-tomato sandwich.

Is was really very tasty and seems mouthwatering.

A healthy alternative of Energy Bars.

As most of stores have been shut down, So decided to prepare energy bar’s replacement.

I got the recipe from LG@RenuK and decided to prepare mini chunks full of goodness.

This one is a mixture of 25 pitted dates, oat flour, almonds, coconut oil, vanilla essence, peanut butter and a splash of milk.

I really enjoyed these gooey bites full of goodness and health benefits.

Including these, I also tried many other sandwich and whole meal prepared by my mother. It was too good full of kindness and taste.

Everyday around 5, I start carving noodles and coffee. Yesterday, while i sit behind my laptop and books; I was dreaming about amazing pink latte. Also, I took a moment to appreciate even a better pink macron.

I really enjoyed the above delicacies, those were too healthy and tasty too.

@VinayKrishna wow mouth watering dishes. Out of all i tried the egg and bread (heart shaped). It turned out so yummy. Very easy to make and less time consuming. Not much ingredients we need. Well, all recipes are awesome. Keep it up.

Mushrooms are my favourites.

I loved the way you used mangoes in that mix, it might really turned into an unexpected surprise while tasting.

I always search for the tasty, nutritious, yet low calories energy bar in supermarket. It would be great to make it by myself, so that I’m so pleased if you could share the recipe.

Thanks for posting such delicious and mouth watering dishes. I personally loved energy bars this looks like similar to kalakand (famous sweet from Bihar). Rest dishes are also looking good and mouth watering.

Hey @Velvel ,

On behalf of @RenuK , i am sharing the same that you asked.

Ingredients:

  • 20-25 pitted dates
  • 2 cups of oat flour (made by grinding oats)
  • 10 almonds
  • 2 tbsp coconut oil
  • 1 tbsp vanilla essence
  • 5 tbsp of peanut butter
  • A splash of milk (you can use any milk)

Method:

  • Grind the dates until you have sticky paste like consistency. Grind for 5-6 seconds, stop, scrape down the sides and then grind again.
  • Next, grind the almonds until they are fully crushed.
  • In a vessel, add oat flour, the crushed almonds, date paste, coconut oil, vanilla essence, peanut butter and start mixing it like a you would knead a dough. (I used my hands to do this so make sure you wash them properly)
  • If you think the mixture is little bit sticky, add a little bit of milk and mix again.
  • Take a baking tray and line with a cling film. Spread the mixture evenly on it and pat it with a spoon to make sure it’s laid flat.
  • Cover the top part with a cling film as well and set it in the fridge or freeze it for a minimum of two hours.
  • When you bring it out, remove the cling film and cut into small chunks.

Take a picture and send it to me and sit back and enjoy your bites full of goodness.

This pink latte is actually made up of beetroots. This is super pretty and healthy too. My version looks like it’s made with candy floss, but it’s actually pretty healthy and does not contain any artificial colours.

Beetroots in their native form or even their powders can be used to get the same. This pink latte is more than just a drink! It can be served as a dessert.

Actually, The pink colour is from beetroots. I hadn’t added any artificial colour. So, i can’t assure you about the purple one.

Kalakand is made up of Ricotta, sugar and solidified milk or panner on the other hand these energy bars are made up of dates, almonds, coconut oil and lots of peanut butter.

@Velvel if you are storing this in your refrigerator then, this will last around 7-10 days easily.

Everything look so delicious and I am sure it is! It’s great that @VinayKrishna prepared all of the food by himself. I’ve liked a lot the mushroom sandwich although I don’t like mushrooms, it looks soo delicious!
